EGGLESS TUTTY FRUITY CAKE


Fresh out of the oven. Now isn't that a true delight. One of the finest cake i have ever made & it's super easy. It's been 1.5 years since my little munchkin was born and life has never been better. Everytime, he shows up a growing trait, he takes my breath away. I can't have enough of him so i never had the time to focus on my cooking, But now i am all set again to continue my blog and mark  =the delicious territory after all this time with this ''EGGLESS TUTTY FRUITY CAKE''.
The frost melting in your mouth with sweet and juicy tutty fruity munching together is the best combination ever. I mean who does'nt love the  soft and spongy slice of a cake making it's way to the tummy. What is better than to bake a cake at home rather than buying ones from the market. This freshly baked cake don't only triggers the taste buds but also inculcate love in our hearts. kids go crazy over this as well as grown-ups can't help the feeling of having it. A rich tutty fruity cake will definitely become one of your favourite. Though i had been eating tutty fruity cake from ages, i had never expected making them at home was so easy  till i saw here. It doesn't include any clumsy procedure, you just have to put the ingredients in the right proportion. Just a simple recipie to make your world go all oozy  with the freshly baked cake.

P.S- Recipie i adapted this from khusboo kothari with few changes & highly recommended for easy one bowl cake recpies.

INGREDIENTS:

1 cup plus 5tbsp all purpose flour
2 tbsp cornflour/cornstarch (sifted from height at least 2 times and mix well )
1 cup thick yoghurt
3/4 cup sugar ( use any granulated sugar )
1/2 tsp baking soda
1 tsp plus a pinch of baking powder
1/2 cup refind oil
1 tsp vanilla essence
1 cup tutty fruity
1/2 tsp salt ( or add according to your taste )
2 tbsp water  ( add only if the batter is too thick- as thickness of yoghurt varies for everyone )

INSTRUCTIONS:

1. Preheat the oven at 180' c / 350 f .
2. Line the cake tin with butter paper.
3. Cream the sugar and yoghurt until the sugar dissolves completely.
4. Add oil and vanilla essence and mix well.
5. Now slowly add sifted flour into the wet ingredients.
6. Fold the fry ingredients in the wet ones with a spatula or whip it with stand mixer until lumpfree and smooth batter.
7. Do not over mix the batter.
8. Add water if needed.
9. Now pour the batter in the baking pan and bake the cake for 20-25 mins or till toothpick inserted into comes out clean.
10. Take it out from the oven & transfer onto the cooling rack after 10 minutes.
